Weekly Eats No. 43
Another meal plan post coming a day early this weekend. I have a fun post headed your way tomorrow (again) but I wanted to make sure I didn't leave you hanging!
This week is supposed to be pretty mildly rainy and quintessentially Pacific Northwest-y so warm food seems in order. It's actually a little cooler here than I was hoping for but I'll take that over 90 degrees any day.
Monday: Monday is our 5 Year Wedding Anniversary. We had a fun date night on Saturday to celebrate, but we still want to celebrate at home together. So we're moving Meatless Monday to another day this week and having our traditional fondue night. We're also planning a charcuterie board, cream puffs, and a bottle of Prosecco. Because we don't take celebrations lightly (in food or form) around here.

(Meatless) Tuesday: Supposed to be pretty rainy on Tuesday, so Stew and Cornbread sounded good. We came up with an idea for a Vegetarian Tofu Chili. Going to try it out and see if it works. I'll be sure to share if it does!
Wednesday: Crock Pot Pulled Pork Sandwiches with Cole Slaw and Sweet Potato Fries.
The pork is as simple as throwing a pork tenderloin in the crock pot with a bottle of BBQ sauce. Low for 6-8 hours. Shred and serve on toasted buns or Texas Toast.
The cole slaw is my own recipe that I'll photograph and share in the next couple of weeks.
Thursday: Broiled Salmon Gyros with Cucumber Feta Yogurt Dip. I made these once before, probably a year ago and I still remember how delicious they were. I've got some dill in the garden getting a little out of hand so I thought this would be a good use for it.
Friday: Buttered Noodles and Meatballs with Veggies. I'll be whipping up a batch of my favorite Turkey Meatballs and tossing them in with some buttered noodles and roasting some veggies to go in with it. Simple. Delicious.
Saturday: We're going to be taking a little weekend trip to the ocean for Father's day (leaving Saturday morning, coming home Sunday evening), so Saturday will (hopefully) be seafood and family date night.
Sunday: We're hoping to be home by dinner time on Sunday so it'll be the same ole breakfast food or leftovers, possibly pizza delivery if we can't muster the energy to turn the stove on and whisk the eggs.
