Weekly Eats #42

We're finally back to kind of a normal week this week! It's been like a month of three day weekends, guests, birthdays, holidays... just a lot of crazy! And while I loved every minute of it, I think I'm glad to get back to a little bit of normal. So here's our meal plan for this week!

(Meatless) Monday: Goat Cheese and Veggie Quiche in a Sweet Potato Crust. I'm using this recipe for the crust and quiche, but I'm adding a few more veggies to the mix to up the health factor a bit. I'm thinking maybe some sauteed kale and some sun-dried tomatoes. Yum.

(Taco) Tuesday: Shrimp Tacos on the Barby. Grilled shrimp in corn tortillas with lime, cilantro, avocado, and queso fresco. Keeping it simple over here. 

For the shrimp: Put a bit of olive oil (1-2 Tbsp or so), 1/2 tsp cumin,  1 1/2 tsp chili powder, minced garlic (about 2-3 cloves), salt, pepper, juice of half a lime in a bowl and mix. Put in thawed or fresh shrimp and mix to combine. Grill on the grill or on a grill pan until pink and curled. Serve with fresh cilantro over the top and the rest of the lime juice. 

Wednesday: Slow Cooker Parmesan and Potatoes. This is a new Damn Delicious recipe and as soon as I saw it on her Instagram, I literally sent it a screenshot to Tomas and I was like "For dinner next week?" because I knew. It was food love at first site. And I think we tend to forget crock pot dinners for the warmer months. But the slow cooker is really one of the best tools we have to make dinner without also making our house feel like the Amazon. Plus, on busy summer days, dinner is already done. So, for this one, I'm not altering the recipe per se but I do think I'll add our non-starchy veggies in about 30 minutes before dinner to steam them. I'm thinking broccoli, maybe some carrots? Yum. And if I can get myself together enough, maybe a fresh greens salad on the side. As much doubtful about that as I am hopeful, but hey, a girl can dream.

Thursday: Summer Squash Pasta with homemade Turkey Bolognese. I have some red sauce in the freezer that I'll thaw and add to browned turkey meat then throw over some sauteed, spiralized zucchini and yellow squash (tutorial in this book!). The recipe for my quick and easy red sauce is coming to the blog later this week, so look out for that! 

Friday: Potstickers and Homemade Soy Ginger Sauce. I'm usually a fan of making our own potstickers in huge batches and then freezing some. However, I don't have any made and I'm not going to count on having the time this week to make them (it's kind of involved). So I'm planning to pick up a bag of pre-made, frozen potstickers at Trader Joe's and making up for it with this delicious homemade soy ginger sauce. I'll probably steam some quinoa to go on the side.

Saturday: We usually go out on Fridays for family date night, but Monday is our wedding anniversary so we've secured a babysitter and are going out Saturday to celebrate. It will be a really nice little breakaway and nice to go somewhere that's less than kid friendly. We'll have leftovers for the boys, I'm sure, so I'm not going to have to make anything new.

Sunday: The usual. Leftovers/Breakfast food. If we have leftovers that need to be used, then it's kind of fend for yourself. Otherwise, we always have eggs so we can always whip up some toast and eggs for a quick and easy dinner.
